This soup base is blended with Hatch, New Mexico Red Chile. Feel free to experiment! Chicken Enchilada Soup: 1/3 cup Red Chile Chicken Soup Base, 1 lb. cooked chicken meat, 3 cups diced canned tomatoes, 1/2 cup grated cheddar cheese, 8-10 fresh corn tortillas chopped, 1 quart chicken broth 1 quart water. Bring all ingredients to a boil. Reduce heat and simmer for 1 hour.
